Photoessay #1162 - Lemon Pie Recipe


By popular demand (ok, 1 person), I'm posting the recipe for the lemon pie.

You mean you can't tell from the scan of my recipe card?

Lemon Pie (annotated) from Claire Ginsburgh

Crust:
1 1/2 cups flour
1 tbl sugar
shake of salt
mix
1/2 cup oil
1/4 cup milk

Put the dry ingredients directly into 9" pie pan. Mix the oil and milk and knead into the dry ingredients. Form the crust (I used my hands) on the bottom and sides. Bake 350 degrees for 10 minutes or until brown

Filling:
3 eggs
1 tsp vanilla
1 can sweetened condensed milk
1/2 cup lemon juice (use juice from fresh lemon and add other to make total)
Rind of 1 lemon

Separate the eggs. Combine the other ingredients and the egg yolks in another bowl. Whip the egg whites up to soft peak. Then mix the other ingredients with a mixer. Fold in the egg whites.

Pour into pie crust (it's supposed to be cooled but I usually don't wait)

Here's the tricky part. Put the pie under the broiler (turn on!) and watch carefully. It doesn't take long at all to brown. Turn it around so it browns evenly. Cool and refrigerate. Better if made some hours before.
